This photo, taken at Uncle Mutt’s Barbecue in Victoria, Texas, reminds me to always be flexible while traveling and, of course, mindful of local customs. Sometimes in life we have a now! now! now! attitude. Like a lot of places in the world, (Southeast Asia comes to mind,) certain parts of South Texas run on a more relaxed time schedule. To be honest, I love efficiency, but an easy pace and leisurely lifestyle sounds better by the day. Sometimes you just have to wait for that barbecue plate. I assure you, it’s worth the wait!

Love it. It’s good business practice too. After all if they open at ten thirty the customer feels lucky, if they save ten thirty and then don’t open til ten forty, the customer feels impatient. We should see more of it!

So great! If it’s good bbq, it’s worth the wait…I just got back from a week in NC and ate bbq every chance I got…hard to find good Southern bbq in Sicily!
Just like you can’t get good Southern bbq in China! There are only a few things on my list of “must eats” while home, and bbq is definitely one of them!
At least they’re honest rather than promising a 10:30 opening time and not delivering!

This reminds me of traveling out west when I was a young child, and going to some sort of Mexican restaurant with my parents. My father, ever impatient, asked what was taking so long with our food…to which the server replied “no hurry here”. That phrase has been part of our family lexicon ever since that day

I want this sign for my house (haha). Reminds me of my new mechanic though… not so easy being flexible w/ 3 in car seats and only 1 car!
